Cooking at Home

It's fantastic when spring begins, and the fresh produce arrives.  Happily my boyfriend enjoys asparagus as much as I do.  I roasted asparagus and then wrapped the spears in jamon serrano.  Trader Joe's is carrying a new mixture of Spanish charcuterie.  The jamon serrano reminded my boyfriend of prosciutto, and the saltiness was a nice contrast to the asparagus.  I experimented with cooking quinoa in my Zojirushi rice cooker.  Treated just like rice, it was very easy to make and has a nutty flavor.  I roasted cod fillets and made a roasted tomato, cilantro and kalamata olive tapenade.  Light but filling and healthier than my cold weather cooking.
