Our local pho joint off of Route 1 at 6226 Richmond Highway has undergone a wee makeover. Apparently the regular manager and his key staff have relocated to Virginia Beach. The owner has returned to more frequent oversight and made some improvements. The staff is still slow at cleaning off the dirty tables, but I can deal with that as long as the steaming bowls of pho continue to have this broth with a deeper, more full-bodied flavor.

These are good and I should definitely make some for summer lunch bentos.
