What do you do when you discover you've only eaten half of the 5 pounds of fresh kimchi and you've already made kimchi chige and kimchi bokum bap? Break out the low sodium Spam and some eggs with leftover bokum bap. I'm still not convinced that Spam is actually incredibly good, but it does pair very well with cooked rice, eggs and kimchi.
We went for a 9 mile run-walk later to balance out the breakfast gluttony.
